Sweet Potato and Apple Bake

3 sweet potatoes, peeled and quartered

½ cup firmly packed brown sugar

2 large cooking apples - peeled, cored and cut into 1/4 inch rings

¼ cup all-purpose flour

¼ cup firmly packed brown sugar

¼ cup butter

¼ cup chopped pecans
Cooking Instructions

Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook for 25 minutes, or until tender yet firm. Drain, let cool, and slice into 1/4-inch rounds.

Preheat the oven to 350°F (175°C). Grease a 7x11-inch baking dish lightly.

In a small bowl, combine brown sugar, cinnamon, and nutmeg.

Layer the sweet potatoes, brown sugar mixture, and sliced apples in the prepared baking dish.

In a separate bowl, mix flour, brown sugar, butter, and pecans. Sprinkle this crumble mixture over the sweet potatoes.

Bake for 30 minutes or until the top is golden brown and the casserole is bubbly.
