Sweet Potato Gnocchi Recipe

Ingredients Needed

1 pound sweet potatoes

1 large egg

1 clove garlic, pressed

½ teaspoon salt

½ teaspoon ground nutmeg or to taste

2 cups all-purpose flour, or as needed
Instructions

Preheat the oven to 350°F (175°C).

Roast the sweet potatoes in the preheated oven for about 30 minutes or until soft. Once done, remove them from the oven and let them cool for 15-30 minutes.

Peel the cooled potatoes, discard the skins, and mash the flesh in a large bowl or use a ricer. Add egg, garlic, salt, and nutmeg. Gradually mix in the flour until a smooth dough forms.

Bring a large pot of salted water to a boil.

As the water heats up, shape the dough into long, snake-like logs on a floured surface. Cut the logs into 1-inch pieces.

Drop the dough pieces into the boiling water. Once they rise to the surface, use a slotted spoon to transfer them to a serving dish and keep warm until ready to serve.
Cooking Tip
You can substitute butternut squash for the sweet potatoes in this recipe for a different twist.
