Instructions
Start by collecting all the required ingredients.

Remove the chicken skin and discard it. Make slits in the meat and place the chicken in a shallow dish. Sprinkle with lemon juice and salt on both sides. Let it rest for 20 minutes.

In a medium bowl, combine yogurt, onion, garlic, garam masala, ginger, and cayenne pepper until smooth, then mix in food coloring.

Coat the chicken with the yogurt mixture, cover it, and refrigerate for 6 to 24 hours (longer marination enhances the flavor).

When ready to cook, preheat an outdoor grill to medium-high heat and lightly grease the grill grates. Take the chicken out of the marinade and discard the leftover marinade.
Grill the chicken over the preheated heat until the meat is no longer pink and the juices run clear. Use an instant-read thermometer near the bone; it should read 165°F (74°C).
