Preheat your outdoor grill to medium-high heat and lightly oil the grill grates.
Place each chicken breast, one at a time, between two sheets of plastic wrap or parchment paper on a cutting board. Use a meat mallet or rolling pin to gently pound the breasts to a 1/2-inch thickness.

In a large zip-top bag, combine lemon juice, olive oil, dried oregano or parsley, seasoning salt, black pepper, and onion powder. Add the chicken, press out as much air as possible, and seal the bag. Gently massage the chicken to evenly coat it with the marinade. Let the chicken marinate in the refrigerator for at least 30 minutes, or up to 12 hours for extra flavor.

Preheat the grill to medium-high heat and lightly oil the grates.
Place the chicken breasts, smooth-side down, on the preheated grill. Cook with the lid closed until the chicken is no longer pink and the juices run clear, about 5 minutes per side. Use an instant-read thermometer to ensure the center reaches at least 165°F (74°C).

Transfer the grilled chicken to a cutting board and cover loosely with aluminum foil. Allow it to rest for 5 minutes before serving.
