Tender Pork Chops

Ingredients List
Brine Mixture:

1 tablespoon whole black peppercorns

1 bay leaf

4 (5 ounce) center-cut pork chops on the bone
Spice Rub:

½ cup packed brown sugar

1 teaspoon garlic powder

1 teaspoon paprika
-
½ teaspoon onion powder
-
½ teaspoon dry mustard powder
-
½ teaspoon kosher salt
-
¼ teaspoon freshly ground black pepper

1 tablespoon olive oil, or more as needed

aluminum foil
Instructions
Prepare the brine: In a bowl, combine cold water, salt, peppercorns, and a bay leaf. Place the pork chops in a shallow baking dish and pour the brine over them. Let the pork chops soak for 1 to 2 hours.
Meanwhile, prepare the seasoning mix: In a small bowl, mix together brown sugar, garlic powder, paprika, onion powder, mustard powder, salt, and pepper.
Preheat your oven to 400°F (200°C).
Once the pork chops have finished soaking, remove them from the brine, rinse with cold water, and pat them dry. Generously coat the pork chops with the seasoning blend on both sides. Discard the brine.
Heat a cast iron skillet over medium-high heat. Once hot, add oil to the skillet. Place the pork chops into the oil and sear until browned, about 2 to 3 minutes.
Flip the pork chops and transfer the skillet to the preheated oven. Bake until the center is no longer pink, about 6 to 8 minutes. Remove from the oven, cover loosely with aluminum foil, and let rest for 5 minutes before serving.

Chef's Tip
I like to serve these with Chef John's Nectarine Salsa on top. It takes a little extra time to make, but the flavor combination is absolutely worth it!
