Tender Smothered Filet Mignon

¼ cup extra virgin olive oil

¼ cup balsamic vinegar

1 tablespoon Dijon mustard

2 teaspoons dried rosemary

1 tablespoon butter

2 cups onion slices

1 teaspoon white sugar

4 ounces blue cheese, crumbled
Instructions
Season the steaks with seasoned salt and black pepper, then arrange them in a large baking dish in a single layer. In a separate bowl, combine olive oil, balsamic vinegar, mustard, and rosemary, whisking until blended. Pour the marinade over the filets and turn them to coat evenly. Let the steaks marinate for up to 30 minutes.
While the meat marinates, melt butter in a skillet over medium heat. Add onion slices and cook until they soften, then sprinkle in sugar. Continue cooking until the onions become golden and caramelized. Set them aside.
Preheat the grill, setting one side to high heat and the other to medium heat.
Lightly grease the grill grate. Place the steaks on the hotter side of the grill and cook for 10 minutes, flipping once. Once the steaks are nearly done, move them to the cooler side of the grill. Top each filet with a portion of caramelized onions and blue cheese. Close the lid and let the cheese melt as the steaks finish cooking.
