Thai Peanut Pork in the Slow Cooker

Ingredients List

• cooking spray

• 2 red bell pepper, seeded and sliced into strips

• 4 (8 ounce) boneless pork loin chops

• ½ cup teriyaki sauce

• 2 tablespoons rice vinegar

• 2 cloves garlic, minced

• 1 teaspoon crushed red pepper flakes

• ¼ cup creamy peanut butter

• ½ cup chopped green onions

• ¼ cup chopped roasted peanuts

• 2 limes, cut into wedges

Instructions

1. Spray the slow cooker with cooking spray, then add the bell pepper strips and pork chops. Pour teriyaki sauce, vinegar, garlic, and red pepper flakes over the pork chops.

2. Cover and cook on Low for 8 to 9 hours, until the pork is tender. Once done, remove the pork from the slow cooker and stir in peanut butter until smooth. Return the pork to the slow cooker and cook for an additional 10 minutes.

3. Transfer the pork to a serving dish, garnish with green onions and peanuts, and serve with lime wedges for decoration.
