Thai-Style Grilled Beef

2 tablespoons coriander seeds, coarsely cracked

½ cup firmly packed dark brown sugar

¼ cup soy sauce

1 tablespoon lime juice

2 cloves garlic, minced

1 pinch ground ginger

1 ½ pounds flank steak
Instructions
Place the flank steak in the freezer for 20 minutes to firm it up.
In a bowl, whisk together coriander, brown sugar, soy sauce, lime juice, garlic, and ground ginger until the marinade is well mixed.
Take the steak out of the freezer and slice it thinly against the grain. Place the slices in a large bowl, pour the marinade over them, and toss to coat. Cover the bowl and let the steak marinate at room temperature for 1 hour.
Position the oven rack about 6 inches from the broiler element and preheat the broiler. Line the bottom of a broiler pan with aluminum foil.
Arrange the steak slices in a single layer on the broiler rack of the prepared pan.
Broil the steak in the preheated oven, brushing with the marinade occasionally, until it reaches your preferred level of doneness, about 1 to 2 minutes for medium-rare.
