2 (14 ounce) cans coconut milk

1 yellow onion, chopped

3 small red potatoes, cut into cubes, or as needed

3 red Thai chile peppers, chopped with seeds, or more to taste

Heat oil in a large skillet over medium-high heat. Add curry paste and cook, stirring until smooth. Add chicken pieces and coat them thoroughly with the curry paste.

Pour in one can of coconut milk and stir to combine until the paste dissolves and starts to bubble, about 3-5 minutes. Then add the remaining coconut milk, chicken broth, onions, potatoes, and chilies. Bring to a boil, then reduce heat and simmer for about 25 minutes until the potatoes are soft. Remove from heat.
