The Ultimate City Chicken Recipe

Ingredients List
-
2 pounds boneless pork, cut into 1 1/2-inch cubes
-
14 (4 inch) skewers
-
salt and ground black pepper to taste
-
seasoned salt (such as LAWRY'S®) to taste
-
4 eggs
-
3 tablespoons milk
-
2 cups Italian seasoned bread crumbs
-
2 cups vegetable oil for frying
Instructions
-
Prepare all necessary ingredients.
-
Thread 2 or 3 pieces of pork onto each skewer. Season the pork with salt, pepper, and seasoned salt, then set the skewers aside.
-
In a bowl, whisk together eggs and milk. Place bread crumbs in another bowl. Fill a 9x13-inch baking dish with 2 cups of water and set a wire rack in the dish; set aside. Preheat the oven to 350°F (175°C).
-
Heat oil in a deep fryer or large saucepan to 350°F (175°C). Dip each pork skewer in the egg mixture, then coat in the bread crumbs; dip again in the egg mixture and coat with bread crumbs a second time.
-
Carefully lower the skewers into the hot oil in batches. Fry until golden and crispy, about 3 minutes per side. Transfer to a paper towel-lined plate to drain. Repeat with remaining skewers. Arrange the fried skewers on the wire rack in the baking dish and cover with aluminum foil.
-
Place the baking dish in the preheated oven and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes to crisp up the coating.
