Cooking Instructions

Preheat the oven to 400°F (200°C).

In a bowl, combine butter, minced garlic, thyme, rosemary, lemon zest, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper.

Gently loosen the skin on the chicken's breast, then rub the butter mixture between the skin and meat. Press the skin to spread it evenly. Coat the entire chicken with oil, the remaining salt, and pepper. Place halved lemons inside the chicken’s cavity and arrange in a baking pan.

Roast the chicken in the preheated oven, basting every 30 minutes, until the meat is no longer pink and the internal temperature reaches 165°F (74°C) when measured at the thickest part of the thigh. Let the chicken rest for 15 minutes before carving.
Chef’s Tip
After rubbing the herb butter beneath the chicken skin, I recommend letting it chill in the fridge for a few hours or even overnight to allow the flavors to meld together.
