Thyme and Maple Roasted Sweet Potatoes and Vegetables

1 pound sweet potatoes, cut into long, thin rectangles

1 large carrot, cut into long, thin rectangles

1 parsnip, cut into long, thin rectangles

extra-virgin olive oil as needed

salt and ground black pepper to taste

4 sprigs fresh thyme

2 tablespoons maple syrup, or to taste
Instructions

Preheat the oven to 375°F (190°C).

Arrange the sweet potatoes, carrots, and parsnips on a baking sheet. Drizzle with olive oil and season with salt and freshly ground black pepper.

Roast the vegetables for about 30 minutes, or until they begin to soften. Add thyme sprigs and drizzle with maple syrup. Return to the oven and roast for an additional 15 minutes, or until the vegetables are tender.
