4 slices pepper Jack cheese

4 slices whole wheat bread, toasted
Step-by-Step Instructions

Combine tomato, mayonnaise, red onion, relish, and piri piri in a small bowl. Season with salt and pepper to your liking.

Coat both sides of the tilapia with seafood seasoning and garlic powder.

Heat butter in a skillet over medium heat. Add the seasoned tilapia and cook until golden brown, about 2-3 minutes per side, until the fish flakes easily. Top with two slices of pepper Jack cheese, cover, and let it melt, 1-2 minutes.

Place each tilapia fillet on a slice of toasted bread. Spread with mayonnaise mixture, then top with the second slice of bread.
Helpful Hints
If piri piri isn't available, feel free to substitute with cayenne pepper.
