Tofu Sandwich Spread Recipe

1 pound firm tofu

1 stalk celery, chopped

1 green onion, chopped

½ cup mayonnaise

2 tablespoons soy sauce

1 tablespoon lemon juice
Instructions

Drain the tofu and freeze it overnight. Once thawed, cut into quarters. Press out excess moisture by hand, then wrap it in paper towels and squeeze again. Crumble into a medium-sized bowl.

Combine celery, green onions, mayo, soy sauce, and lemon juice. Mix until everything is evenly combined.
