Instructions
Preheat your oven to 375°F (190°C). Lightly coat a 9x13-inch baking dish with cooking spray. Rinse the pork chops and gently pat them dry with paper towels.
In a bowl, combine mayonnaise with Cajun seasoning. Spread the breadcrumbs evenly on a large plate.
Brush the seasoned mayo mixture onto the pork chops, then gently press each chop into the breadcrumbs, ensuring they are evenly coated. Shake off any excess and place the breaded chops into the prepared baking dish.
Bake the pork chops in the preheated oven for about 35 minutes, until the center is slightly pink. Use an instant-read thermometer to check that the internal temperature reaches at least 145°F (63°C). Once done, remove from the oven, cover loosely with foil, and let rest for 10-15 minutes before serving.

Feel free to use any seasoning you love when mixing the mayo—there are so many great seasoning blends available in stores now. Panko breadcrumbs can usually be found next to the regular breadcrumbs.
