Instructions
Combine onion, garlic, and ginger in a food processor and blend into a smooth paste. Heat oil in a large skillet over medium heat, then add the onion paste. Sauté while stirring constantly for about 10 minutes until fragrant and golden.
Add cumin, turmeric, salt, pepper, cardamom, cinnamon, cloves, bay leaves, and nutmeg to the skillet. Stir and sauté for 1-2 minutes, allowing the spices to bloom. Add chicken pieces and toss them in the spice mixture, ensuring they are evenly coated.
Continue sautéing for another 4 minutes, then add the tomatoes along with their juices. Stir well and lower the heat to simmer for 1 to 2 hours, or until the oil has separated from the sauce. Stir occasionally. (Tip: If simmering uncovered, the sauce will thicken; add water or cover to maintain moisture.)
