Traditional Homemade Manti (Turkish Dumplings)
Ingredients List
For the Dough:
-
2 cups all-purpose flour, plus more for dusting
-
½ teaspoon salt
-
2 large eggs
-
½ teaspoon water, or as needed
For the Filling:
-
2 onions, peeled
-
½ pound ground beef
-
salt and pepper to taste
Spicy Red Pepper Oil:
-
3 tablespoons vegetable oil
-
1 tablespoon red pepper flakes
Garlicky Yogurt Sauce:
-
1 (8 ounce) container plain yogurt
-
1 tablespoon minced garlic
Step-by-Step Instructions
-
Prepare the dough: In a large bowl, mix flour and salt. Add eggs and water, stirring with your hands until the dough comes together. Add more water if necessary to form a soft dough. Cover and let rest for at least 30 minutes.
-
Prepare the filling: Grate onions and place in a colander or sieve to drain off excess moisture. Combine the drained onion with ground beef, salt, and pepper in a medium bowl. Stir well until the mixture is smooth and fully combined. Set aside.
-
Lightly dust a work surface and a large plate with flour.
-
Divide the dough in half. Roll one portion at a time on the floured surface into a thin rectangle. Cut into 2-inch squares using a knife or pastry cutter.
-
Place about 2 teaspoons of the filling in the center of each square. Pinch the edges together at the top to form a small bundle. Transfer the manti to the prepared plate, sprinkling more flour on top to prevent sticking.
-
Prepare the red pepper oil: Heat oil and red pepper flakes in a small pan over low heat until the flakes begin to darken the oil. Remove from heat and keep warm.
-
Make the yogurt sauce: Mix together yogurt and garlic in a small bowl. Set aside.
-
Bring a large pot of salted water to a boil. Add the manti and cook for 20-25 minutes, or until the filling is cooked through and the dough is tender. Drain well.
-
Serve the manti on 4 plates. Top with yogurt sauce and drizzle with red pepper oil.
