1 cup vegetable oil for frying

18 (6 inch) corn tortillas

3 cups crumbled queso fresco, divided

Step-by-Step Instructions

Remove the stems from dried chiles and place them in a saucepan with enough water to fully submerge them. Bring the water to a boil, then lower the heat and simmer for 15 minutes. Drain the chiles and transfer them to a food processor or blender along with garlic and salt. Blend until smooth. Strain the sauce and set it aside.

Heat oil in a large skillet over medium heat. Dip each tortilla into the sauce, then fry it in the hot oil, flipping almost immediately. Fry for about 5 seconds on the other side, then remove and place on a plate lined with paper towels. Stack them to maintain their flexibility for filling.

Take a fried tortilla, add 2 tablespoons of queso fresco, and roll it up. Place each rolled tortilla seam-side down on a plate, serving three per plate.

For the toppings, layer as follows: start with sour cream, then add a handful of shredded lettuce, followed by three slices of tomato, another 2 tablespoons of queso fresco, and a sprinkle of green onions.
