1 tablespoon olive oil, or as needed
Instructions
Prepare all the necessary ingredients before starting.

Coat the beef thoroughly with thyme, basil, marjoram, dry mustard, salt, and black pepper, then place it in a resealable plastic bag. Seal the bag and refrigerate for 8 hours or overnight.

Add red wine to the bag 4 hours prior to cooking.

Preheat your oven to 450°F (230°C). Pour olive oil into the bottom of a roasting pan and then place the beef in the prepared pan.

Roast the beef in the preheated oven for 15 minutes. Then, lower the temperature to 350°F (175°C) and continue roasting until the center is slightly pink, about 20 to 25 minutes more. Use an instant-read thermometer to check for a reading of 140°F (60°C) in the center. Let the roast rest for 5 to 10 minutes before slicing thinly against the grain.
