Trout Amandine: A Classic Delight
Ingredients for Trout Amandine

2 whole (10 ounce) trout, pan-dressed

salt and pepper to taste

¼ cup all-purpose flour

4 tablespoons butter

½ cup blanched slivered almonds

2 tablespoons lemon juice

1 tablespoon chopped fresh parsley, for garnish

Instructions for Making Trout Amandine

Rinse the trout and pat dry. Season with salt and pepper, both inside and out. Lightly coat the trout in flour.

In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the trout and cook until both sides are golden brown. Reduce the heat to medium and cook for about 5 minutes on each side, or until fully cooked. Transfer the trout to a serving plate and keep warm.

Wipe the skillet clean and melt another 2 tablespoons of butter over medium heat until it begins to brown. Add the almonds and cook until they are golden and fragrant.

Spoon the almond butter sauce over the trout and finish with a squeeze of fresh lemon juice and a sprinkle of parsley. Garnish with lemon slices for an extra touch.
