Turkey and Vegetable Stuffed Peppers

½ onion, chopped

1 cup sliced mushrooms

1 zucchini, chopped

½ red bell pepper, chopped

½ yellow bell pepper, chopped

1 cup fresh spinach

1 (14.5 ounce) can diced tomatoes, drained

1 tablespoon tomato paste

Italian seasoning to taste

garlic powder to taste

salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
Collect all the ingredients.

Wrap the green bell peppers in aluminum foil and arrange them in a baking dish. Bake for 15 minutes in the preheated oven, then remove from the oven.

Brown the turkey in a skillet over medium heat, then set aside. In the same skillet, heat oil and sauté onion, mushrooms, zucchini, red and yellow bell peppers, and spinach until soft. Add the turkey back into the skillet, then stir in tomatoes and tomato paste. Season with Italian herbs, garlic powder, salt, and pepper. Stuff the green peppers with the turkey and vegetable mixture.
