Instructions

Prepare all the ingredients.

Inspect the walleye fillets to ensure that all bones and skin have been removed. Cut the fillets into suitable pieces if necessary.

In a shallow bowl, mix flour, garlic powder, pepper, and salt. In a separate shallow bowl, whisk the eggs. Place cracker crumbs on a plate.

Heat oil in a deep fryer or large cast iron skillet to 375°F (190°C).

Dip each fillet into the flour mixture, followed by the beaten egg, and then coat thoroughly with the cracker crumbs. Set aside on a plate.

Carefully drop 2 fillets into the hot oil using tongs. Fry until golden brown, approximately 3 minutes per side. Transfer to a paper towel-lined plate. Repeat with the remaining fillets. Serve with fresh lemon wedges.

To crush saltine crackers, place them in a large resealable bag and use a rolling pin (or any makeshift tool) to roll until they reach a fine breadcrumb-like texture.
