Cooking Instructions

Heat the wine in a small saucepan over low heat until it begins to simmer.

In the meantime, melt the butter in a medium saucepan over medium-low heat. Whisk in the flour to form a thick paste. Gradually add the wine and stir until the mixture is smooth. Slowly incorporate the Gruyère, Cheddar, and Emmentaler cheeses, stirring until melted, about 5 minutes.
