Vegetable Patties

2 teaspoons olive oil

1 small onion, grated

2 cloves crushed garlic

2 carrots, shredded

1 small summer squash, shredded

1 small zucchini, shredded

1 ½ cups rolled oats

¼ cup shredded Cheddar cheese

1 egg, beaten

1 tablespoon soy sauce

1 ½ cups all-purpose flour
Instructions
In a skillet, heat olive oil over low heat and sauté the onion and garlic for about 5 minutes, or until softened. Add the chopped carrots, squash, and zucchini, and cook for an additional 2 minutes. Remove the skillet from heat and stir in oats, cheese, and egg. Pour in soy sauce, mix well, and transfer the mixture to a bowl. Refrigerate for 1 hour before shaping into patties.
Preheat your grill to a high temperature.
Spread flour evenly on a large plate. Shape the vegetable mixture into 8 patties, each about 3 inches in diameter. Gently dredge each patty in the flour, coating both sides lightly.
Lightly oil the grill grate, then grill the patties for 5 minutes on each side, or until they are fully heated and golden brown.
