1 teaspoon cumin

1 (1.25 ounce) package taco seasoning mix

-
2 fresh jalapeno peppers - seeded, sliced, and divided
-

Cooking Instructions

Bring water to a boil in a saucepan. Stir in the rice, reduce the heat, cover, and let it simmer for 20 minutes.
-
Preheat the oven to 375°F (190°C).
-
In a medium skillet, combine soy crumbles, tomatoes, reserved tomato juice, chili powder, cumin, and taco seasoning. Cook over medium-high heat for 10 minutes, stirring and breaking up the tomatoes.
-
Place a flour tortilla in a lightly greased 8x8-inch baking dish. Layer with half of the beans, jalapenos, rice, salsa, soy mixture, and 1 cup of Cheddar cheese. Repeat with the remaining ingredients, starting with another tortilla, and top with the remaining 1 1/2 cups of Cheddar cheese.
-
Bake in the preheated oven for 15 minutes or until heated through and the cheese is melted. Serve hot.
