Vegetarian Pot Pie Delight

1 (14.1 ounce) package double-crust pie pastry, thawed
Instructions
Gather all your ingredients. Preheat your oven to 425°F (220°C) to get ready for baking.
Heat oil in a large skillet or saucepan. Add mushrooms, onions, and garlic, and sauté for 3 to 5 minutes, stirring occasionally. Add carrots, potatoes, and celery to the mix. Then, add cauliflower and green beans, followed by vegetable broth. Bring to a boil, reduce the heat, and simmer until the vegetables are tender, about 5 minutes. Season with salt and pepper to taste.
In a small bowl, whisk together water, cornstarch, and soy sauce until the cornstarch fully dissolves. Stir this mixture into the vegetables and cook for an additional 3 minutes, or until the sauce thickens.
Roll out half of the dough and line an 11x7-inch baking dish. Pour the vegetable filling into the dish. Roll out the remaining dough and place it on top of the filling. Seal the edges and create a decorative border with the dough.
Place the pie in the preheated oven and bake for about 30 minutes, or until the crust turns golden brown on top.
