Vibrant Chicken Pesto with Asparagus, Sun-Dried Tomatoes, and Bell Peppers

10 ounces uncooked angel hair pasta

2 teaspoons olive oil

2 skinless, boneless chicken breast halves, cut into strips

1 (6 ounce) jar sun-dried tomatoes packed in oil, drained and chopped (reserve oil)

½ pound fresh asparagus, trimmed

1 yellow bell pepper, cut into strips

1 red bell pepper, cut into strips

1 cup prepared pesto

½ cup grated Parmesan cheese

1 pinch crushed red pepper flakes, or to taste (Optional)

2 teaspoons grated Parmesan cheese
Instructions

Bring a large pot of salted water to a boil, then add the angel hair pasta. Cook for 4-5 minutes, stirring occasionally, until the pasta is tender. Drain well.

Heat olive oil in a large skillet over medium heat. Add the chicken strips and cook, stirring occasionally, for about 5 minutes until lightly browned.

Pour in the oil from the sun-dried tomatoes, then add asparagus and cook, stirring for about 2 minutes until slightly softened. Add the red and yellow bell peppers and cook for another 2 minutes.

Gently toss the sun-dried tomatoes and pasta with the chicken and vegetables in the skillet. Stir in pesto sauce and 1/2 cup of Parmesan cheese. Finish with a sprinkle of crushed red pepper flakes and the remaining 2 teaspoons of Parmesan cheese for garnish.
