What is Risotto and What is it Made From?
Although it may look like rice, risotto is actually a traditional Italian dish made with a special variety of short-grain, high-starch rice, such as Arborio, Carnaroli, or Vialone Nano. This type of rice absorbs a lot of liquid while maintaining its firm texture, never becoming mushy.
Along with the rice, a classic risotto typically includes a small amount of onion or shallot sautéed in butter, dry white wine, hot stock, vegetables or mushrooms, and various seasonings to enhance flavor.
Can Other Grains Be Used for Risotto?
Risotto can also be made with other small, starchy grains like pearl barley, brown rice, spelt, or buckwheat. While these whole grains may result in a less creamy and more textured dish compared to traditional risotto rice, the flavor is just as delightful. You can even create a mock risotto using orzo pasta.
How is Paella Different from Risotto?
Both paella, a Spanish seafood dish, and risotto, an Italian classic, use short-grain rice. However, paella calls for a unique rice called Valencia or Bomba rice, which stays firmer and separates more easily during cooking. In contrast, risotto rice absorbs more liquid and becomes creamy, with the grains sticking together.
What Defines Authentic Italian Risotto?
In northern Italy, where risotto originated, there is a wide variety of regional risotto dishes to suit each season. One of the most iconic is Risotto Milanese, made with saffron. Risotto Primavera features fresh spring vegetables like green asparagus, while porcini risotto, wild mushroom risotto, and the luxurious truffle risotto are all popular variations.
