Instructions

Heat oil in a pot over medium heat. Add the rice, ginger, and lemon zest and sauté for about 1 minute. Stir in the lemon juice and chicken broth, then bring to a boil. Cover and simmer until the liquid is absorbed and the rice is tender, about 18-20 minutes. Season with salt and pepper to taste.
