If you have a bit more time, you can layer the freshly sliced zucchini in a colander, sprinkling salt between each layer. Place a plate or similar item on top and weigh it down—large bottles of water or bags of sugar work well! After about 30 minutes, you'll be surprised by how much liquid is released. You can then pat the zucchini dry with a clean cloth or paper towel (be careful not to leave any paper behind) before cooking.
For the thinnest, most uniform slices, a mandoline slicer works best.
