4 eggs, beaten

1 zucchini, sliced into rounds
Instructions

Preheat the oven to 350°F (175°C). Lightly grease a 9x9-inch casserole dish.

In a large mixing bowl, combine biscuit mix, oregano, seasoning salt, garlic powder, salt, parsley, and Parmesan cheese. Add onion, eggs, and oil, mixing until well combined. Stir in the zucchini and pour the mixture into the prepared casserole dish.

Bake in the preheated oven for 30 to 35 minutes, or until the quiche is fully set and golden brown on top. Let cool for 5 minutes before slicing and serving.
