Vegan restaurant becomes the first in France to earn a Michelin star
For the first time, a French vegan restaurant has been awarded one of the prestigious Michelin stars.
ONA, short for Origine Non Animale (Non-Animal Origin), has received this honor in the latest edition of the renowned Michelin Guide.
Located in the small village of Arès, near Bordeaux, the restaurant is the first animal-free venue to be included in the Michelin Guide since its inception in 1900.
ONA is among 54 restaurants to earn their debut Michelin star in the 2021 guide. Michelin highlighted that the 2021 selection reflects a growing diversity of culinary styles across France.
‘At ONA … vegan cuisine takes the spotlight for the first time in a Michelin-starred restaurant in France,’ the guide noted.
Vallee shared her emotional reaction when the Michelin Guide’s international director called her on Thursday to inform her that ONA had earned the star. 'Cooking with my team feels like a theater performance. You only know how it’s received in the end,' she told Dinogo.
Vallee founded the restaurant in 2016 after raising funds through crowdfunding and securing a loan from Nef, an ethical bank. When funds ran out to complete the restaurant, Vallee enlisted 80 volunteers via social media to help finish the work over two months.
‘This is a significant milestone for the vegan community, as this star demonstrates that French gastronomy is becoming more inclusive, with plant-based dishes now recognized,’ Vallee said.
‘The team and I are incredibly proud. The Michelin star, along with the green star, is a form of recognition not just for us, but for the local producers and vegetable farmers we collaborate with,’ she added.
During the early stages of the coronavirus pandemic, the restaurant operated as a takeaway-only service and has since benefited from state support, Vallee told Dinogo.
Vegan-only restaurants have become increasingly popular in recent years, reflecting the growing demand for plant-based diets.
US-based chain Slutty Vegan has seen growth during the pandemic, while several established chains have expanded their vegan menu offerings.
The Michelin Guide is striving to maintain its relevance during a challenging time for the hospitality industry, as more chefs distance themselves from the prestigious award.
