From Nagano City to Karuizawa. It was around lunch time, so I went to this restaurant that my partner was interested in.When I looked at Google, I saw the word "reservation required"...I apologized for the inconvenience, but when I contacted them over the phone, they replied that they would need some time to prepare, but if that was ok with them! I made a request. There is a shop across the street from the bakery, and when you open the door, you will be greeted by the manager of the attached waffle shop (the son of a married couple). You can have your meal inside. We were given seats at the counter. It's nice to be able to see the food being prepared right in front of your eyes and enjoy the live feeling! We received a plate of appetizers, a main dish, and a drink. They carefully explained each item they provided, including the drinks, and I could really tell that they were particular about the ingredients they used, and I felt that they were really good at making the most of those ingredients. Of course, the game was delicious, with no odor that is common. The meat was so big that you can't really see it in the photo, so I think it would have been nice to have a knife with me lolIt was run by a family, and we happened to be the only guests, so we ended up staying a long time, enjoying the food and stories. I was impressed that the couple had such a wonderful way of thinking.I would love to visit you again to enjoy delicious food and meet your wonderful family.

Main of the second day of the gourmet tourKaruizawa lunch! They originally have a full organic plate for lunch, but since I was going there, I asked over the phone if I wanted to try an excerpt from the evening course so that I could enjoy the restaurant to its fullest.↑This is exactly what I said over the phone.A stubborn customer (゚o゚;;The omakase course was about ¥7,000!Moved to Karuizawa last summer.I will definitely go there from the moment I find it! ! I saved it asAnyway, what attracted me wasBeing able to eat vegetables that are particular about [seeds].Maybe in the maniac rangeThere are many shops that specialize in vegetables. There are many shops that are particular about using no pesticides or fertilizers. There are also shops that are particular about the earth...While going to various shops,There aren't many shops that focus on making vegetables from seeds, so I was really interested! It will take a long time to talk, butThe vegetable seeds used in this shop areOnly native and fixed species. That's importantF1 seeds are not used.↑If you are interested, please look it up using this word♪In any case, we are very particular about it without compromise,Not only are we particular about seeds, but other ingredients as well! !The meat is only wild game, the mushrooms are natural and seafood. The river produce is also natural, the dairy products are 100% pasture-raised, the non-alcoholic drinks are fermented kombucha and enzyme juice, and most of the seasonings are homemade...I was so picky and addicted that I was shaking (゚o゚;;I won at rock-paper-scissors (lol) and was able to sit at the counter, so I was stunned as I listened to the chef and his wife talk right in front of me!I feel the power of vegetables, and I'm impressed by how nutritious they are.Even just one kombucha,Kombucha made from unsterilized fruit from Afghanistan,For dessert, they purchase cacao beans from Madagascar and make their own chocolate.I can't stop taking notes! The chef cut the dishes himself with a chainsaw.Or a stump. It was really fun ^_^Of course the taste is also excellent. From the first soup, it was amazing!Basically, ingredients are fermented or aged. The combinations and ideas are original.I'm so excited!↑As I was writing this, I started laughing at how much of an otaku I am.Not only delicious but also educationalI was happy to share it with everyone.4 hours by highway from Nagoya.Although it's far away, people who have the same hobbies as me should be shocked. If you are interested, please make a reservation!…#Earth Oven #Shuji Kudo#Karuizawa #Yuuizawa #Seminar #seminar#Native species #Native vegetables #Fixed seeds #Fixed vegetables #Fixed native seeds #Fixed seeds #Fermented #Fermented beauty #Aging #Aged meat #Karuizawa lunch #Nagano Prefecture #Nagano #Nagano lunch #Gourmet Tour #Pesticide-free vegetables #Natural mushrooms #Kombucha #Kitasaku District #Kitasaku District, Nagano Prefecture

About 30 minutes walk from Shinano Oiwake Station. It seems like there are buses, but they don't run very often so it might not be practical. If you don't want to walk, it's better to book a taxi. It's located along the old Nakasendo road, and there are villas near the store, as well as some historical buildings, so it's a fun road to walk on, so you can totally walk on it.On this day, I made a reservation for lunch on a holiday. It's a restaurant that looks like a detached house, and there are counter seats right next to the restaurant, which seems to be the only one used.Only one group per day can stay overnight. The restaurant is run by the chef and his wife, and currently the chef is away from time to time supporting Ishikawa's reconstruction efforts, so he wasn't there that day, but it looks like he's about to finish his time at the restaurant. On the days when only his wife was there, he had to carry the child on his back and it seemed difficult. For lunch, we only have an organic plate for lunch. They also have gelato and ganache sweets.I received a lunch plate and homemade enzyme juice. The first lunch plate consists of various vegetable dishes, smoked salmon milt, and ham.The rakon was a sweet radish that looked like fruit.I was surprised at how delicious the vegetables were.Carrots, potatoes, turnips, etc. are all sweet, full of flavor, and really delicious. For the second dish, I had a choice of pasta or risotto, so when I chose pasta, it was potato gnocchi. It's called pasta, but it's topped with venison steak. The potatoes are from Dejima. The sauce is topped with stewed Chinese cabbage called bamboo shoots and Chinese cabbage, which is also very delicious. It is said that when Chinese cabbage is boiled, more and more glutamic acid comes out, but it turned out to be glutamic acid. The meat is Ezo deer thigh from Nemuro.Although the venison had a lean taste, it was easy to eat and delicious, but it was dull in front of the Chinese cabbage and gnocchi.I would also like to try the game game full course at night. It's still not well known, but I think it will definitely become popular if it is discovered in the future.

We have a wide selection of natural ingredients such as native and fixed vegetables, mushrooms and wild plants, game meat, and organic drinks.Lunch is a set of a plate of appetizers with a wide variety of vegetable dishes, and either pasta or risotto, and considering the ingredients used and the elaborate preparation, I think it's very reasonable.

The earth oven visible from the entrance is a natural clay pot made from local materials.People passing by and parked motorists are looking at it curiously.During dinner time, this pot is used to cook wood-fired vegetables, wild game, and Karuizawa wildflowers. The cuisine seems to be a traditional regional dish, but it also reflects the chef's Italian roots.
