Amanda's Beef and Mushroom Stuffed Peppers

Ingredients

1 pound ground beef

½ cup bread crumbs

½ teaspoon Italian seasoning

3 cloves garlic, chopped

¾ cup shredded mozzarella cheese, divided

¾ cup grated Parmesan cheese, divided

1 egg, lightly beaten

½ small onion, finely chopped
-
6 white mushrooms, chopped
-
4 bell peppers, tops cut off and seeded

1 (26 ounce) can spaghetti sauce
Directions

Preheat the oven to 350°F (175°C). Line a 9x13-inch baking dish with aluminum foil.

In a large bowl, combine ground beef, breadcrumbs, Italian seasoning, garlic, 1/2 cup mozzarella cheese, 1/2 cup Parmesan cheese, egg, onion, and mushrooms. Stuff the mixture evenly into the prepared bell peppers and replace the tops. Arrange the stuffed peppers in the prepared baking dish.

Bake in the preheated oven for about 1 hour, or until the meat is fully cooked. Once done, remove the peppers from the oven and discard the tops.

Top the stuffed peppers with the remaining 1/4 cup mozzarella and 1/4 cup Parmesan cheese. Return to the oven and bake for an additional 2 minutes, or until the cheese is melted.

Heat the spaghetti sauce in a medium saucepan over medium heat, stirring occasionally. Once the sauce starts to steam, remove from the heat and pour it over the stuffed peppers.
