2 green onions, chopped
Instructions

Heat olive oil in a saucepan over medium heat. Stir in quinoa and toast for 2 to 3 minutes. Add chicken broth, soy sauce, ginger, and garlic. Raise the heat to bring the mixture to a boil. Cover and reduce to low heat. Simmer until the liquid is absorbed, about 25 to 30 minutes. Fluff with a fork and garnish with green onions before serving.
