Aussie Beef and Mushroom Stroganoff

1 tablespoon butter

1 onion, chopped

1 teaspoon minced garlic

8 fresh mushrooms, sliced

2 teaspoons curry powder

1 pound beef top sirloin, thinly sliced

2 cubes beef bouillon

1 ½ cups boiling water

1 (6 ounce) can mushroom stems and pieces, drained

¼ cup dried shiitake mushrooms

1 ¼ cups heavy cream

1 (8 ounce) package uncooked egg noodles
Instructions

In a large skillet, melt the butter over medium heat. Add the onions, garlic, and fresh mushrooms, cooking until the onions turn translucent. Stir in the curry powder and blend well. Add the beef strips and cook until browned on all sides.

Dissolve the bouillon cubes in boiling water and stir into the skillet. Add the mushroom stems, pieces, and dried shiitake mushrooms. Let the mixture simmer for about 20 minutes, until most of the liquid evaporates.

Meanwhile, bring a pot of salted water to a boil. Cook the noodles for about 7 minutes, or until tender, then drain.

Lower the heat under the skillet, pour in the cream, and stir until the sauce is smooth and well-mixed. Simmer for 5 minutes, but avoid boiling. Serve the stroganoff over the cooked noodles.
