Instructions

In a skillet, combine sliced onion, chopped apple, 2 tablespoons of olive oil, 1 tablespoon of vinegar, thyme, and rosemary. Cook and stir over medium heat for about 15 minutes, until the onions are lightly browned and the apples are tender. Add brown sugar to taste for a touch of sweetness. Keep warm and set aside.

Season the pork chops with salt, pepper, and paprika, and place them in a separate skillet. Drizzle with 1 tablespoon each of vinegar and olive oil. Cook the pork chops over medium heat for about 5 minutes on each side, until the center is no longer pink and reaches an internal temperature of 145°F (63°C).

Place the cooked pork chops on a serving dish and spoon the apple-onion topping over the top. Serve right away.
