Bacon and Parmesan Penne Pasta

1 (16 ounce) package dry penne pasta

1 pound bacon, coarsely chopped

1 large onion, chopped

¼ cup olive oil

½ cup grated Parmesan cheese
Instructions

Bring a large pot of salted water to a boil. Add penne pasta and cook, stirring occasionally, until al dente, about 11 minutes.

While the pasta cooks, sauté bacon and onion in a large skillet over medium heat, stirring frequently, until the bacon is crispy and the onions begin to brown, around 10 minutes. Remove from heat and drain excess grease into a small container.

Drain the pasta and transfer it to a large bowl. Drizzle with oil and toss to coat. Add the cooked bacon and onions along with 1-2 tablespoons of the bacon grease. Sprinkle the Parmesan over the pasta and toss until evenly combined. Add more bacon grease if you desire extra flavor and moisture.
