Bacon, Cheddar, and Caramelized Onion Quiche

1 (9-inch) unbaked pie crust

1 egg, beaten

1 medium onion, finely chopped

1 ¼ cups sour cream

¼ cup cream cheese, softened

⅛ teaspoon ground black pepper

1 cup shredded Cheddar cheese
Cooking Instructions

Preheat the oven to 350°F (175°C).

In a large skillet, cook bacon over medium-high heat, turning occasionally, until crispy, about 10 minutes. Drain on paper towels and let cool for 10 minutes before crumbling and setting aside.

Roll out the pastry dough using a floured rolling pin to fit a 9-inch pie dish. Place the dough in the pie dish and prick the bottom with a fork.

Bake the crust in the preheated oven for 15 minutes on the middle rack.

Remove the crust from the oven and brush it with a beaten egg. Return the crust to the oven and bake for an additional 5 minutes.

Melt butter in a pan over medium heat. Add the onions and cook, stirring occasionally, until softened, about 5 minutes. Reduce the heat to low and continue cooking, stirring occasionally, until the onions are deeply browned and caramelized, about 40 minutes more.

In a bowl, whisk together the remaining 2 eggs. Add sour cream and cream cheese, then beat with an electric mixer until smooth and well combined. Season with salt and pepper.

Spread the caramelized onions with the remaining butter on the pie crust. Sprinkle with 1/2 cup of Cheddar cheese, then layer with crumbled bacon. Pour the egg mixture over the top and sprinkle with the remaining 1/2 cup of Cheddar cheese.

Bake the quiche in the preheated oven for about 30 minutes, or until golden and fluffy. Allow the quiche to cool for 10 minutes before serving.
