Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken, seasoning it with salt and pepper. Cook and stir until the chicken is golden brown, about 3 to 5 minutes. Remove the chicken from the pan and set it aside.

Add the remaining oil to the same skillet and toss in the bell peppers and onions. Cook and stir until they’re tender, about 3 minutes.

Add garlic and cook, stirring, until it becomes fragrant. Then, mix in 2 tablespoons of balsamic vinegar and basil.

Return the chicken to the skillet, lower the heat, cover, and simmer until the chicken is fully cooked, with no pink remaining and the juices running clear, about 20 minutes.
