Balsamic Roasted Brussels Sprouts

1 ½ pounds Brussels sprouts, trimmed

2 tablespoons olive oil

1 onion, thinly sliced

2 cloves garlic, minced

¼ cup balsamic vinegar

2 tablespoons butter

1 teaspoon salt

½ teaspoon ground black pepper

½ teaspoon garlic powder
Instructions

Bring a large pot of salted water to a boil. Add Brussels sprouts and cook for about 2 minutes, just until they start to soften. Drain and plunge into ice water for a few minutes to halt the cooking process. Drain again.

In a skillet, heat olive oil over medium heat. Sauté onion and garlic in the oil until the onion is tender, about 5 to 10 minutes. Add Brussels sprouts and cook, stirring occasionally, until they are fully tender, about 8 to 10 minutes.

Stir in balsamic vinegar, butter, salt, pepper, and garlic powder. Toss to coat the Brussels sprouts in the flavorful mixture.
