Instructions
In a large Dutch oven, heat oil over high heat and sear the cubed stew meat until browned. Remove the meat and set aside. In the same pan, sauté bacon, onions, and celery until the onions are soft and the bacon is crisp. Return the browned stew meat to the pan and mix well.
Add the seasoning salt, Worcestershire sauce, and beef broth to the pot. Bring it to a boil, then cover and reduce the heat to medium. Let it simmer for 1 to 1 1/2 hours, or until the meat becomes tender and easily pulls apart with a fork.
Bring a large pot of water with a pinch of salt to a boil. Add the egg noodles and cook for 8 to 10 minutes, or until they reach an al dente texture. Drain the noodles once cooked.
In a skillet, melt butter over medium heat and sauté the mushrooms for 3 to 4 minutes until they're golden and tender. Add the cooked mushrooms to the meat mixture.
Bring the meat mixture to a boil. In a small bowl, combine cornstarch and water, then stir this mixture into the meat. Continue stirring constantly. Once thickened, add sour cream and stir until the sauce is smooth and creamy. Serve the dish over the cooked egg noodles.
