Black Bean Tortilla Lasagna
Ingredients Needed

1 tablespoon vegetable oil

2 onions, chopped

3 cloves garlic, chopped

½ green bell pepper, diced

½ red bell pepper, diced

2 (15 ounce) cans black beans, drained and rinsed

1 (14.5 ounce) can chopped tomatoes

1 cup salsa
-
salt and black pepper to taste

2 avocados, peeled, pitted, and mashed

1 clove garlic, chopped
-
1 tablespoon fresh lemon juice

12 (6 inch) corn tortillas, quartered

2 cups shredded Cheddar cheese
Instructions

Preheat your oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish.

In a large skillet, heat oil over medium heat. Add the onions, 3 cloves of chopped garlic, and bell peppers. Cook until the onions are soft and translucent. Stir in the black beans, tomatoes with their juice, and salsa. Season with salt and pepper. Let it simmer for about 3 minutes.

In a bowl, mash together the avocados, 1 clove of chopped garlic, and lemon juice.

Layer corn tortillas in the bottom of the prepared baking dish. Spread 1/3 of the bean mixture over the tortillas. Add 1/2 of the avocado mixture, then sprinkle with 1/3 of the cheese. Place another layer of tortillas on top. Add half of the remaining bean mixture, then spread the rest of the avocado mixture. Finish with the remaining cheese. Repeat the layering with the last ingredients.

Bake in the preheated oven for about 35 minutes, until the sauce is bubbly and golden.
