2 tablespoons olive oil

1 (4 ounce) package sliced fresh mushrooms

2 cloves garlic, chopped

½ cup diced celery

⅓ cup diced onion

½ cup water
-
1 ½ cubes chicken bouillon

2 (12 ounce) cans garbanzo beans, drained and rinsed

1 egg

2 teaspoons dried sage

1 teaspoon salt

1 teaspoon ground black pepper
Instructions

Preheat the oven to 350°F (175°C) and lightly grease a glass baking dish with cooking spray.

In a large skillet, heat the olive oil. Cook the mushrooms, garlic, celery, and onion in the oil for 3 to 5 minutes. Add the water and bouillon, stirring until the bouillon dissolves.

In a bowl, combine the garbanzo beans, egg, sage, salt, and pepper. Mash the mixture with your hands until fully blended. Stir in the vegetable mixture, then transfer everything to the prepared baking dish. Cover with aluminum foil.

Bake in the preheated oven for 30 minutes, then remove the foil and bake uncovered for an additional 10 to 15 minutes.
