Buttermilk Hush Puppies

2 eggs, room temperature

1 cup cornmeal

1 cup all-purpose flour

¼ cup white sugar (Optional)

½ teaspoon salt

½ cup minced onion

4 green onions, minced
Instructions
Heat 1 quart of vegetable oil in a deep fryer or large pot until it reaches 365°F (185°C).
Preheat the oven to 200°F (95°C).
In a bowl, whisk together buttermilk, 1/4 cup vegetable oil, and eggs.
In a separate bowl, mix cornmeal, flour, sugar, baking soda, and salt. Gently fold in the buttermilk mixture, onion, and green onions until just combined.
Carefully drop tablespoon-sized spoonfuls of batter into the hot oil. Fry until golden brown, turning occasionally for even cooking, about 6 to 10 minutes. Use a slotted spoon to remove hush puppies and drain on brown paper bags. Continue with the remaining batter.
Transfer the cooked hush puppies to a baking sheet and keep warm in the preheated oven until ready to serve.
Chef's Tip
Adding sugar to your hush puppies will help them brown quickly, but it can also cause them to cook faster than expected. Keep an eye on the oil temperature and avoid making the hush puppies too large to ensure they cook all the way through.
If you’d like to incorporate corn, fold in 1/4 cup of canned or frozen kernels.
For a bit of heat, add 1 minced jalapeno or 1 teaspoon of Cajun seasoning.
