Cajun Crawfish Ya-Ya Pasta from Louisiana

¾ (12 ounce) package egg noodles

½ cup butter

½ cup chopped onion

¼ cup minced green bell pepper

2 tablespoons chopped fresh parsley

1 clove garlic, minced

1 (16 ounce) package cooked and peeled whole crawfish tails

2 tablespoons Cajun seasoning blend (such as Tony Chachere's), or to taste

¾ cup shredded Cheddar cheese

½ cup heavy cream

⅓ cup sliced fresh mushrooms (Optional)

⅓ cup sliced green onions
Instructions

Bring a large pot of salted water to a boil. Cook the egg noodles in the boiling water, stirring occasionally, until they are tender yet firm, about 5 minutes. Drain and set aside.

In the meantime, melt butter in a large skillet over medium heat. Sauté the onion, bell pepper, parsley, and garlic in the butter until the onion becomes soft and translucent, about 5 minutes. Add the crawfish tails and Cajun seasoning, and let it simmer for an additional 5 minutes.

Stir in 1/2 cup of Cheddar cheese, heavy cream, and mushrooms; mix until the cheese melts. Add the cooked noodles and green onions, stirring until everything is well combined. Top with the remaining 1/4 cup of Cheddar cheese before serving.
