Cauliflower au Gratin

1 head cauliflower, cut into florets

1 small onion, chopped

2 tablespoons all-purpose flour

1 cup milk

6 ounces shredded Cheddar cheese, divided

1 pinch ground black pepper

1 pinch ground nutmeg, or to taste
Cooking Instructions
Place a steamer basket in a saucepan and add enough water to reach just below the bottom of the basket. Bring the water to a boil, then add the cauliflower. Cover and steam until tender, about 5 to 7 minutes.
Preheat the oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.
In a small saucepan, melt butter over low heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Stir in the flour and cook, constantly stirring, until the mixture begins to brown, about 3 to 5 minutes. Slowly add the milk, whisking continuously until the sauce is smooth. Cook until the sauce starts to simmer.
Remove the sauce from the heat and stir in half of the Cheddar cheese until melted. Season with pepper and nutmeg.
Transfer the steamed cauliflower to the prepared baking dish, then pour the cheese sauce over the cauliflower. Top with the remaining Cheddar cheese.
Bake in the preheated oven for about 25 minutes, or until the cheese is melted and golden brown.
