Cheese-Stuffed Chicken Thighs with Roasted Potatoes and Carrots

1 Roma tomato, seeded and diced

1 pound red potatoes, scrubbed and halved

1 pound carrots, peeled and cut into 3-inch pieces

Cooking Instructions

Preheat the oven to 350°F (175°C). Prepare a rimmed baking sheet by lining it with foil and greasing it with cooking spray.

Flatten chicken thighs on a clean surface. Use a meat mallet to pound them to an even thickness. Season with salt and pepper.

In a large bowl, whisk the egg with a fork. Add 1/2 cup of mozzarella cheese, chopped onion, tomato, and black olives. Stir in enough breadcrumbs to form a cohesive filling.

Spoon the filling into the center of each chicken thigh. Fold the chicken over the filling and secure with toothpicks. Place the stuffed thighs on the prepared baking sheet, and top with the remaining 1/4 cup of mozzarella cheese.

Arrange the potatoes and carrots around the chicken thighs. Drizzle olive oil over the vegetables and season with salt and pepper.

Bake for 35 to 40 minutes, or until the chicken is fully cooked and the juices run clear. The vegetables should be tender, and a thermometer inserted into the center of the chicken should read at least 165°F (74°C).
