Cheesy Bean Quesadillas

1 onion, finely diced

2 cloves garlic, minced

1 (15 ounce) can black beans, rinsed and drained

1 green bell pepper, chopped

2 tomatoes, chopped

½ (10 ounce) package frozen corn

12 (12 inch) flour tortillas

1 cup shredded Cheddar cheese

¼ cup vegetable oil
Instructions
Heat 1 tablespoon of oil in a pan over medium heat, then sauté the onion and garlic until softened. Add the beans, bell pepper, tomatoes, and corn; cook until everything is warmed through.
Evenly distribute the bean and veggie filling onto 6 tortillas. Top with a generous amount of shredded Cheddar cheese, then cover with the remaining tortillas to form the quesadillas.
Heat 1/4 cup of oil in a large skillet over medium-high heat. Carefully place the quesadillas in the pan and cook, flipping once, until the cheese has melted and both sides are golden brown.
