Chef John's Crispy Cottage Fries

Ingredients Needed

4 baking (russet) potatoes, sliced into 3/8-inch thick rounds

salt and freshly ground black pepper to taste

1 pinch cayenne pepper, or to taste

1 pinch herbes de provence, or to taste

2 tablespoons olive oil
Cooking Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or use a silicone baking mat for easy cleanup.
In a large bowl, toss the potatoes with salt, black pepper, cayenne pepper, and herbes de Provence. Drizzle with olive oil and stir to coat evenly. Spread the potatoes in a single layer on the prepared baking sheet.
Bake in the preheated oven for 15 minutes. Flip each potato slice and bake for an additional 15 minutes.
Continue baking and flipping until the potatoes are golden brown and crispy around the edges, about 30 minutes. The center should remain soft and tender.
